Cup Characteristics: This Mexico SHB EP coffee features smooth and light which has medium-high acidity and body with a slight tang and pleasant bouquet. It carries a mellow depth of flavor with a beautiful balance.
Mexico is the seventh largest coffee producer in the world with an annual production of 4 million bags. It is also one of the largest producers of organic coffee, and is significantly involved in many ethical movements and organizations, including: Utz, Rainforest Alliance, Organic and Fair Trade. The highest quality beans are SHB coffees, which is Strictly Hard Bean, which means that the coffee must be grown at an altitude of above 4,000 feet.. Coffee grown at high altitudes are known as being the best because it increases the acidity of the bean, and because of the high altitude, the nights are often cooler which slows down the maturity of the coffee plant allowing the beans to develop to a fuller flavor.
