Ethnobotanic Information:
The Carob or 'Algarroba' is the fruit of the Algarrobo tree whose botanical name is Hymenaea coubaril. This is a endemic tree from Puerto Rico and from the Tropical America. The pulp of the fruit is edible and can be use to make caramel cream, milkshake and others desserts and beverages. The tree may grow up to 150 feet height. Its wood is hard and has an attractive reddish color valuable for construction and cabinet making. In Puerto Rico it seeds is used in handcrafting and for the folcloric game 'Gallitos'.

Fruto del algarrobo . Grado no alimentario. Para uso en cofeccion de artesanias o extraccion de semillas para proposito de siembra.Las semillas de algarrobo, de las que hay hasta siete por capsula,
se usan para artesanías y fueron populares para hacer gallitos.
Luego de barrenar y atar la semilla, los participantes tomaban
turnos para golpear su gallito con el del oponente. La pelea
terminaba cuando una de las semillas se rompía. Las victorias se
heredaban, por lo que los triunfos acumulados por el gallito
perdedor se sumaban a las del vencedor. En Sudamerica las
semillas son dispersadas por varios animales, particularmente por
el roedor llamado agutí. Es posible que antes de la colonizacion
nuestra jutía tuviese un papel similar, pero desde entonces el ser
humano ha sido aquí el principal dispersor de la especie. El arbol
florece durante la primavera y el verano, y las frutas maduran
durante el invierno y la primavera

La algarroba es el fruto del arbol algarrobo cuyo nombre botanico es Hymenaea coubaril. Este es un arbol endemico de Puerto Rico y de los tropicos de America. La pulpa de la fruta es comestible y de ella puede hacerse crema de caramelo, batidas y otros postres y bebidas. El arbol puede alcanzar hasta 150 pies de altura. Su madera es dura con un atractivo color rojizo y es valiosa para la construccion y ebanisteria. En Puerto Rico su semilla se utiliza en la cofeccion de artesanias y para el famoso juego folclorico 'Gallitos'.
Hymenaea courbaril is commonly known as the "courbaril" "West Indian locust", "Brazilian copal", and "amami-gum", " mielda en cajita "and "Jatoba".
Although it is sometimes denominated "Brazilian cherry" and "South American cherr] it is not a charry tree but a legume of the family fabaceae. It is also known as "stinking toe", "old man's toe", and "stinktoe " because of the unpleasant odor of the edible pulp of its seeds pods .
