WE BEGIN WITH A BRIEF HISTORICAL OVERVIEW OF A CHEF'S ROLE IN SOCIETY. tHEN WE MOVE ON TO AN INDEPTH DISCUSSION OF THE BSPECIFIC AREAS OF CONCERN FOR THE PROFESSIONAL, INCLUDING FOOD SAFETY AND SANITATION, NUTRITION, AND THE ABILITY TO PURCHASE AND FABRICATE FOODS AND TO USE EQUIPMENT EFFICIENTLY AND SAFELY. IN THE THIRD PART OF THE BOOK, COOKING IN THE PROFESSIONAL KITCHEN, THE EMPHASIS IS ON PROVIDING A CLEAR PICTURE OF THE BASIC COOKING TECHNIQUES USING BOTH WORD AND PICTURES. THE RECIPES THEMSELVES FOUND IN THE FOURTH PART OF THE BOOK, ARE GROUPED ACCORDING TO THE WAY THAT PROFESSIONALS WILL USE THEM. FIVE SEPARATE CHAPTERS INCLUDE ENTREE RECIPES. "THINKING OF BECOMING A CHEF? THIS IS WHERE YOU START, WITH THIS BOOK!" Crabass I'm sitting here looking through this book and it is amazing the amount of info, wow! THE VINTAGE COOK AT CRABASS AFTER YOUR PURCHASE I would prefer you would wait until either I invoice you or you ask for total before paying, for several reasons. First being an accurate total so you and I are getting the best shipping rates, because traditionally I notice shipping is higher because basically you're guessing at final package weight. So the bottom line is this, I will give you the best rate possible, promise! So give me some time or request total and I will give you the fastest one business day shipping possible. Sometimes I use boxes, sometime your books will come wrapped in thick brown paper, depending most times on destination. My object, of course, is for you to receive your items in described condition. I have no control over these people. But rest assured if your package arrives not in described condition I will guarantee I will take care of you.
