What can I say, both myself and my wife love it.
I am no tea expert and usually drink coffee. However with the Harney and Sons Darjeeling tea along with the other spices in the recipe that I have been making I am craving it more and more. The recipe leaves me with a longer and more pleasant aftertaste than my coffee. I still have coffee with breakfast but often have this hot tea midmorning and midafternoon instead of a snack with a lot of calories. However if I am having a sweet dessert I still want my black coffee to contrans with the sweet. hear is the recipe that I have been using.
1 Tablespoon fennel or anise seed
6 green cardamom pods
12 cloves or 1 teaspoon cloves
1 cinnamon stick
1/4" ginger root, sliced thin (I like more 2X)
1/4 tsp black pepper corns
2 bay leaves
7 Cups water
Bring to a boil, and simmer 5 minutes:
Add: 2 Tablespoons Darjeeling tea
Steep 10 minutes:
Add: 6 Tablespoons honey or brown sugar
1 Cup milk
I like making the tea but do not add the milk. Strain the tea and refrigerate.
When ready to use; microwave a cup tea then add two (2) teaspoons of milk and serve.
NOTE: this keeps the milk fresh, otherwise reheating the tea with milk tends to cook the milk and diminish the flavor. I have also found that if I add all of the ingredients except the milk to the water and let it soak over night the flavors are even more intense.
