Iranian cuisine or Persian cuisine refers to the traditional and modern styles of cooking related to Iran. Situated in the Middle East, the Iranian culinary style is unique to Iran, though has historically both influenced and has been influenced by Iran's neighbouring regions at various stages throughout its history. Specifically, these have been mutual culinary influences to and from Mesopotamian cuisine, Anatolian cuisine, and especially the Central Asian cuisine. Many foods famously associated with Middle Eastern, and indeed World cuisine have their origins in Iran, such as kebab and ice cream.
 
It includes a wide variety of foods ranging from chelow kabab (rice served with roasted meat: barg, koobideh, joojeh, shishleek, soltani, chenjeh), khoresht (stew that is served with white basmati or Iranian rice: ghormeh sabzi, gheimeh, fesenjan, and others), ash (a thick soup: for example ash-e anar), kuku (vegetable souffle), polo (white rice alone or with addition of meat and/or vegetables and herbs, including loobia polo, albaloo polo, sabzi polo, zereshk polo, baghali polo and others), and a diverse variety of salads, pastries, and drinks specific to different parts of Iran. The list of Persian recipes, appetizers and desserts is extensive.
 
Fresh green herbs are frequently used along with fruits such as plums, pomegranates, quince, prunes, apricots, and raisins. Typical Persian main dishes are combination of rice with meat, lamb, chicken, or fish and some onion, vegetables, nuts, and herbs. To achieve a balanced taste, characteristic Persian flavorings such as saffron, dried limes, cinnamon, and parsley are mixed delicately and used in some special dishes.

It is believed that rice (berenj in Persian) was brought to Iran from the Indian subcontinent in ancient times (about 4000 years ago). Varieties of rice in Iran include champa, rasmi, anbarbu, mowlai, sadri, khanjari, shekari, doodi, and others. Basmati rice from India and Pakistan is very similar to these Persian varieties and is also readily available in Iran. Traditionally, rice was most prevalent as a major staple item in the rice growing region of northern Iran, and the homes of the wealthy, while in the rest of the country bread was the dominant staple. The varieties of rice most valued in Persian cuisine are prized for their aroma, and grow in the north of Iran.

Essential accompaniments
There are certain accompaniments (mokhalafat) which are essential to every Iranian lunch (nahar) and dinner (shaam), regardless of the region. These include a plate of fresh herbs, called sabzi khordan (basil, cilantro, Coriander, fenugreek, green onion, mint, radish (black, red, white), savory (marzeh, origany or sweet fennel), tarragon, Persian watercress or (shaahi), a variety of flat breads, called naan or noon (sangak, lavash, barbari), fresh white cheese (panir, somewhat similar to feta), walnut, sliced and peeled cucumbers, sliced tomatoes and onions, yogurt, and lemon juice. Persian gherkins (khiyarshur) and mixed pickles (Torshi) are also considered essential in most regions.
 
Tea (chai) is served at breakfast. It may be served at other times, based on the region, usually many times throughout the day. For example, in the province of Khorasan it is served immediately before and after lunch and dinner. The traditional methods of tea preparation and drinking differ between regions and peoples.
 
Traditional table settings and etiquette
The traditional Iranian table setting firstly involves the tablecloth, called sofreh, and is spread out over a Persian rug or table. Main dishes are concentrated in the center, surrounded by smaller dishes containing appetizers, condiments, side dishes, as well as bread, all of which are nearest to the diners. These latter dishes are called mokhalafat (accompaniments). When the food has been served, an invitation is made to all those seated at the sofreh to help themselves. Many Iranians continue to use bread or rice to eat their meals.

Tehran, sometimes spelled Teheran, is the capital of Iran and Tehran Province. With an estimated population of 8,429,807; it is also Iran's largest urban area and city, the largest city in Western Asia, one of the largest in South Asia, and the 19th-largest city globally.
 
In the 20th-21st centuries, Tehran has been the subject to mass-migration of people from all around Iran. The city is home to many historic mosques, churches, synagogues and Zoroastrian fire temples. Contemporary Tehran is a modern city featuring many structures, of which the Azadi (Freedom) Tower and the Milad Tower have come to be symbols of Tehran itself. In 2008 Tehran was the least expensive capital in the world and the second-least expensive city globally based on the cost-of-living index presenting the best value for money in the world. Globally it stands 19th by city population, 56th by the size of its GDP and 29th by the population of its metropolitan area. Throughout Iran's history, the capital city has been relocated many times, with Tehran being the 32nd national capital of Iran. Persian is the city's native tongue, with roughly 98% of the population able to speak and understand it. The majority of people in Tehran identify themselves as Persians. In pre-Islamic and early Islamic times, Tehran was called Ray (which in the Avesta occurs in the form of Ragha)

Tehran historically was known as Ray which is etymologically connected to the Old Persian and Avesta Rhaga. This city was a major area of the Iranian speaking Medes and Achaemenids. In the Zoroastrian Avesta, Widewdat, i, 15, Ragha is mentioned as the twelfth sacred place created by Ahura-Mazda. In the Old Persian inscriptions (Behistun 2, 10–18), Ragha appears as a province. From Ragha, Darius the Great sent reinforcements to his father Wishtaspa when the latter was putting down the rebellion in Parthia (Behistun 3, 1–10). Damavand mountain located near the city also appears in the Shahnameh as the place where Freydun bounds the dragon-fiend Zahak. In the Persian mytho­logical and legendary events. Kayumar?, the Zoroastrian prototype of human beings and the first king in the Shahnameh, was said to have resided in Damavand. In these legends, the foundation of the city of Damavand was attributed to him. Arash, the archer who sacrificed his body by giving all his strength to the arrow that demarcated Iran and Turan; shot his arrow from Mount Damavand. This Persian legend was celebrated every year in the Tiregan festival. A popular feast is reported to have been held in the city of Damavand on 7 Šawwal 1230/31 August 1815, during which the people celebrated the anniversary of Zahhaks death. In the Zoroastrian legends, the tyrant Zahak is to finally be killed by the Iranian hero Garšasp before the final days. In some Middle Persian texts, Ray (Ragha) is given as the birthplace of Zoroaster although modern historians generally place the birth of Zoraster in Khorasan. In one Persian tradition, the legendary king Manucehr was born in Damavand.
 
During the Sassanid era, Yazdegerd III in 641 issued from Ray his last appeal to the nation before fleeing to Khorasan. The sanctuary of Bibi Shahr-Banu situated in modern Tehran spur and accessible only to women is associated with the memory of the daughter of Yazdagird who, according to tradition, became the wife of al-Husayn b. Ali, the third Shi'ite Imam. Ray was the fief of the Persian Mihran family and Siyawakhsh the son of Mihran the son of Bahram Chubin resisted the Arab invasion. Due to this resistance, when the Arabs captured Ray, they ordered the town to be destroyed and ordered Farrukhan b. Zaynabi b. Kula to rebuild the town. In the 10th century, Ray is described in detail in the work of Islamic geographers. Despite the interest of Baghdad displayed in Ray, the number of Arabs there was insignificant, and the population consisted of Persians of all classes. The Ghuzz Turks laid Ray to waste in 1035 and in 1042, but the city recovered during the Saljuqid and Khwarazmian era. The Mongols laid Ray to complete waste and according to Islamc historians of the era, virtually all of its inhabitants were massacared. The city is mentioned in later Safavid chronicles as an unimportant city.

Tehran is the economic centre of Iran. About 30% of Iran’s public-sector workforce and 45% of large industrial firms are located in Tehran and almost half of these workers work for the government. Most of the remainder of workers are factory workers, shopkeepers, laborers, and transport workers. Few foreign companies operate in Tehran because of the Iranian government's relations to the west. But before the Islamic revolution many foreign companies were active in this region. Today many modern industries of this city include the manufacturing of automobiles, electronics and electrical equipment, weaponry, textiles, sugar, cement, and chemical products. It is also a leading center for the sale of carpets and furniture. There is an oil refinery near Ray, south of the city. Tehran has four airports : Mehrabad International Airport, Imam Khomeini International Airport, Ghal'eh Morghi airfield and Doshan Tappeh Air Base.
 
Tehran relies heavily on private cars, buses, motorcycles, and taxis, and is one of the most car-dependent cities in the world. The Tehran Stock Exchange, which is a full member of the Federation Internationale des Bourses de Valeurs (FIBV) and a founding member of the Federation of Euro-Asian Stock Exchanges, has been one of the world's best performing stock exchanges in recent years.

Tehran, as Iran's showcase and capital city, has a wealth of cultural attractions. The Peacock Throne of the Persian Kings (Shahs) can be found in Tehran's Golestan Palace. Some of the well-known museums are National Museum of Iran, Sa'dabad Palaces Complex, Glassware and Ceramics Museum of Iran, The Carpet Museum of Iran, Tehran's Underglass painting Museum, Niavaran Palace Complex, and Safir Office Machines Museum. The Tehran Museum of Contemporary Art features the works of great artists such as Van Gogh, Pablo Picasso and Andy Warhol. The collection of these paintings were selected by the former Empress Farah Diba.
 
Tehran is also home to the Iranian Imperial Crown Jewels, also called the Imperial Crown Jewels of Persia, it is claimed to be the largest, most dazzling and valuable jewel collection in the world. The collection comprises a set of crowns and thrones, some 30 tiaras, numerous aigrettes, jewel-studded swords and shields, a vast amount of precious loose gems, including the largest collections of emeralds, rubies and diamonds in the world. It also includes other items collected by the Shahs of Iran during the 2,500 year existence of the Iranian Kingdom. The Imperial Crown Jewels are still on display in the Iranian Central Bank in Tehran.
