Tuscan pecorino (DOP) is an Italian cheese with a protected designation of origin.

It is a cheese obtained from whole milk exclusively from soft or semi-hard sheep's milk. Pecorino Toscano Stagionato (Aged from Tuscany) has a minimum aged of 90 days. The extra aging produces a more solid Pecorino with greater complexity and a richer flavor. Warm and very tasty, but not overwhelming. This is a wonderful table cheese that goes well with the great Tuscan red wine or Prosecco.
