Ginger plants fall into two main categories: common ginger (Zingiber officinale) -- the type used in cooking -- and flowering ginger, the kind used for ornamental purposes. Both grow in U.S. Department of Agriculture plant hardiness zones 10 through 11, but common ginger’s rhizome undergoes processing that prevents it from grounding and sprouting, whereas flowering ginger produces inflorescences. Although flowering ginger plants, such as the popular red ginger (Alpinia purpurata) and the variegated crepe ginger (Costus speciosus “Variegated”), need moist soil with a pH between 6.0 and 6.8 and moderate watering to satisfy their thirst, they grow well in both poor- and well-draining soil. However, flowering ginger grows vigorously, quickly invading uncultivated areas and encroaching on adjacent plant life.
1 Plant flowering ginger in an area of the garden that receives partial sunlight; if growing more than one, space them 36 to 60 inches apart. When planting ginger in the landscape, avoid planting it near natural areas to avoid an invasion. If growing a pink variety, place a shade cover over the plant during the hottest part of the day to lessen the chances of it acquiring a tip-burn disorder.
2 Set the flowering ginger in a south- or west-facing window when growing indoors and turn them 180 degrees every other day so the sun reaches all areas uniformly.
3 Insert a wood skewer or your finger in the soil or growing medium and check how far the water reaches on the skewer or how wet it feels to gauge the moisture content. The soil or medium should stay constantly moist to a depth of 1 inch or more. Heavy rainfall usually satisfies the plants' watering requirements. If your area receives moderate rainfall or less, or when experiencing drought conditions, irrigate the soil or medium the ginger grows in with 1 to 2 gallons of water per square foot poured from a watering can with a fine rose.
4 Dilute the manufacturer’s recommended amount of concentrated liquid 10-10-10 fertilizer with the suggested amount of water and add it to you watering can once a month. Pour the fertilizer over the soil or medium. The water used to dilute the fertilizer also satisfies one weekly watering requirement in areas with moderate or less rainfall or in areas experiencing drought conditions.
5 Cut back spent flower spikes to ground level using hand pruners or garden shears. Remove dead, damaged or diseased foliage as soon as possible from the plants and discard it.
6 Propagate flowering ginger by dividing, or marcotting -- also referred to as air layering -- one of the numerous aerial offshoots the plant produces. Air layering refers to bending aerial offshoots into a pot and covering the flower heads with growing medium. After the flower heads takes root, cut the offshoots from the parent plant and plant each one separately in pots. Divide flowering ginger by severing it in half vertically with a spade and transplanting one or both of the halves to the desired planting area.
7 Harvest ginger flowers after the bracts – the cone-shaped growths that have small, 1/4-inch flowers emerging from them – have opened two-thirds to three-fourths of the way by cutting the spikes at ground level with garden shears.
