Colombia
is known for producing some of the highest quality coffee in the world.
This unique example, grown in the remote highlands of Nariño,
is dried in the pulp of its cherry, turning the surface of the bean
red. This Red Honey process gives the coffee a fruity sweetness tempered
with vibrant acidity.
Story of the Bean:
The road through the Colombian
Andes ends in Aponte where the Inga community cultivates some of the
highest quality coffees. These skilled Inga producers are descendants of
the Incas who have maintained their identity on these remote peaks.
However, in the 1990's, the Colombian conflict reached the Inga and
their isolated plantations became forcibly involved in poppy production.
As Colombia worked towards peace, the Inga have been cultivating
exceptional coffees. This coffee of unprecedented fruit and floral
qualities comes from a community of unprecedented strength and
resilience.
