The plant itself is also called saffron for short. The three stigmas of the flower (the distal ends of the pistils — the female reproductive organs of the plant) and part of its stigma (the stem connecting the stigmas to the rest of the plant) are dried and used in cooking as a spice and coloring. Saffron, which has been the world's most expensive spice by weight for centuries, grows naturally in Southwest Asia and Southern Europe, especially Greece.

Saffron crocus is a perennial plant that blooms in autumn. Mostly cultivated, it is rarely found in the wild. It is a sterile triploid mutant of the eastern Mediterranean autumn crocus Crocus cartwrightianus. The cultivated saffron crocus has purple flowers that are sterile and do not produce seeds that can germinate on their own without human intervention. Instead, its bulbs must be dug up and broken up by hand in order to be replanted. The bulbs are brown in color, up to 4.5 cm in diameter, and are covered with a mat of parallel fibers. When in bloom, the saffron crocus reaches up to 30 cm. in height. Each flower has a triple-branched pistil, ending in three dark red stamens. They can be between 25 and 30 mm long.

110,000–165,000 flowers are needed for one kilogram of dried saffron. To collect 150,000 flowers, it takes about 40 hours of intensive 24-hour labor by many people. After removal, the stigmas are quickly dried and (preferably) sealed in airtight containers. . The bright dark red color, slight moisture, elasticity, recent harvest date and the absence of broken pieces of threads are signs of fresh saffron. Currently, the country with the largest export of saffron is Iran. How to use Saffron

Culinary purpose: Add to dishes from Arabic, Indian and Asian cuisine.

Tea: Pour 10-15 stigmas with a glass of boiling water and let it brew for 10 minutes. It is recommended to drink in the morning or at lunch, as it has a tonic effect. It is not recommended to use it later in the day.

The easiest way to release saffron is to place 2-3 lollipops in 100 ml of boiling fresh milk with a knob of butter. The milk is added to the rice or the dish you are preparing. One of the favorite teas of the rich is saffron tea, which is extremely expensive. Saffron and turmeric are used as substitutes for the expensive saffron.

Saffron contains carotene, 0.34% essential oil, which in folk medicine is used as an analgesic, diuretic, antiperspirant, antispasmodic and cardiac agent.
