Anyone up for a game of Russian roulette? Shishito peppers aren’t hot – except for when they are! It’s said that about one in 10 shishito peppers is a spicy – a lot hotter than its siblings. Those peppers that get extra light or heat while growing are said to be a bit hotter than the others. You’ll know when you get one.
Are you acquainted with shishito peppers? They are thin-skinned little green peppers that you can cook up in a skillet in ten minutes. Once they have a little char on them, they’re so irresistible.
The pepper is small and finger-long, slender, and thin-walled. Although it turns from green to red upon ripening, it is usually harvested while green.
Shishito pepper (獅子唐辛子, Shishitōgarashi) is a mildly spicy, East Asian pepper variety of the species Capsicum annuum. It is known as kkwari-gochu (꽈리고추; "groundcherry pepper") in Korea because its wrinkled surface resembles groundcherries. The name refers to the fact that the tip of the chili pepper (唐辛子, tōgarashi) looks like the lion (獅子, shishi) head; in Japanese it is often abbreviated as shishitō.
