Potash rockstone (Potassium carbonate) commonly known as kauw, kanwa, etc is used in African kitchen as food tenderizer and soup thickener. It is used to soften greens; bitter leaves, cassava leaves, Roselles, etc and beans ( red and black beans) in the cooking process and help reducing the cooking time.

It also neutralize chemicals residues on crops and leafy and vegetables during cooking, to lessen chemicals effects on human. It increases the slimming content of okro and some leafy vegetables.
