Sourdough starters for the home preparation of lactic acid products are bacterial cultures concentrated in a milk medium, freeze-dried and packaged in capsules. Sourdough for original Bulgarian yogurt is a combination of isolated from natural sources and selected strains of lactic acid microorganisms of the species Lactobacillus bulgaricus and Streptococcus thermophilus.

Bulgarian lactobacillus is known as a factor of health and longevity. The probiotic and curative-prophylactic properties of the lactobacilli strains included in the sourdough have been studied in prestigious medical institutes. Their antimicrobial activity helps to restore the balance in the ecosystem of the digestive tract. They are a factor in the biodegradation of cholesterol, help remove toxins from the body and activate the functions of the immune system.


Method of preparation:
The milk is boiled. Leave hot for 30 min. Cool to 45 °C. Add the leaven from one capsule (the capsule is opened and its contents are poured. Do not drop the entire capsule because it is difficult to dissolve), mix well until it dissolves and pour into suitable containers. The fermented milk is allowed to ferment at 45 °C for 8 ÷ 10 hours without stirring. To maintain the fermentation temperature, a yogurt maker or a thick-walled vessel is used, which is placed in a warm place (in an oven at a temperature not higher than 45 °C).
If fermentation takes place in the evening, the next morning the milk will have coagulated. Refrigerate without stirring. After cooling to 10 °C, it is suitable for consumption.

The quality of the finished product depends on the quality of the fresh milk you use. If the result is unsatisfactory, try another milk.

Sourdough storage: The expiration date depends on the proper storage of the product

2 years at a temperature of 0 to 10 °C.
1 year at a temperature of up to 20 °C in a dry, dark place, away from sunlight.

Composition: Not less than 10 to the 9th power, living cells per gram:

Lactobacillus bulgaricus,
Streptococcus thermophilus.
The strains are isolated from natural sources and are not genetically modified.
