Throughout this cookbook you will find a wide variety of lamb dishes. The flavors and unique use of sauces will tempt your taste buds! The St. Patrick's Day Lamb Cook off was held in Heppner, Oregon. This little town is proud of it's Irish Heritage and shows its strength in numbers over the cook-off weekend. A wide variety of lamb dishes are prepared from the very simple to the very complex. There are several dishes using lamb in chili and also several lamb pizzas. Several boned and rolled leg-o-lambs were prepared as well as lamb chops and racks of lamb. Some of my favorite dishes are the kabobs and stir frys! During the cook-off, the judges look for ease of preparation, use of lamb, presentation, and most importantly, the flavor and texture of the lamb. During the judging, the townspeople and many visitors are watching our faces and asking questions and waiting for the time when they can also enjoy the taste of lamb. The lamb dishes are set out for people to sample and there was never anything left over. The only comments that were heard were 000h's! and aaaahs! The people who have attended the contests have gone away with a new respect for Oregon Lamb. These are people who enjoy looking for and enjoying easy ways to prepare Oregon Lamb in today's lifestyle. Throughout the five years of the contest, the number of young cooks (ages 4-15 years) has steadily increased. This is very important to recognize since they are the up and coming promoters of Oregon Lamb.
