Tuscan pecorino (DOP) is an Italian cheese with a protected designation of origin.
It is a cheese obtained from whole milk exclusively from soft or semi-hard sheep's milk. Pecorino Toscano Fresco (Young) has a minimum aged of 30 days, it is rich and has a semi-soft texture that is best enjoyed as a table cheese served with a nice Chianti Wine.
