The Ancho/Poblano Chile Pepper is mild to hot and is used for chilies rellenos and mole sauces. They range 1000-1500 on the Scoville heat unit (SHU) scale, and are approximately 2 to 8 times milder than a Jalapeno. The ripe green chili (Poblano) pepper can be stuffed with cheese or meat for chilies rellenos, whereas the dark, reddish-brown dried (Ancho) is used in sauces such as the traditional mole pablano
