Cardoon (Cynara cardunculus), also known as Artichoke Thistle, is closely related to the artichoke family. In contrast to the artichoke, Cardoon is cultivated for the stems or stalks. When cooked, Cardoon stalks have a very similar taste to a mild artichoke. Cardoon is an annual in cooler climates, and a tender perennial in zones 7-11. Plants will grow 42" tall and produce beautiful violet blue blooms. Cardoon is considered to be invasive in California
