The Dolmalik, or Dolmalik Biber, is an heirloom Ancho type pepper from Turkey. It has a rich smoky sweet flavor. The peppers ripen from light green to a reddish brown. They are often dried then used as a powder in Turkey to season meats, but the peppers also make an ideal roasting pepper or stuffing pepper for dishes like Turkish dolma.

The roasting process brings out their characteristic sweet, smoky flavor.
