Mild and sweet, lavender to pink 8 x 4 inch white fleshed fruits. Excellent yields from this 1940's heirloom make this plant worth the effort. Skins are not bitter. PLants grow to about 4 feet.

Recipe for Eggplant Fingers



Ingredients:

Several Eggplant Fruits



Seasoned bread crumbs two-thirds cup

1/2 teaspoon salt

1/2 teaspoon celery salt

Pinch of pepper

1/3 cup grated parmesean cheese

Two eggs

Two tablespoons milk

Olive oil



Peel the eggplants and cut into finger sized strips

Combine the bread crumbs, salt, pepper, celery salt, parmesean cheese

Beat the eggs in separate dish and add the milk

Dip the strips into the egg mix and then roll in the bread crumb mix

Fry in olive oil on the stove about 350 degrees

Drain or blot with a paper towel

Serve with salsa or you own homemade ranch dip
